Guinness Corned Beef Recipe

Guinness Corned BeefEvery year I await a delicious corned beef dinner on St. Patrick’s Day. Unfortunately, this is the only time of year I can actually find corned beef at my local woburn grocery store, but that does make it even more special on the holiday.

I always have a traditional New England boiled dinner, but found an intriguing recipe made with Guinness. This recipe was so simple and, by using an Irish stout, still felt traditional. There were almost 500 reviews on this recipe and it had a 4 1/2 star rating so I figured I couldn’t go wrong.

Feel free to add the seasoning packet for some extra flavor. Also, this can be cooked in a crockpot on low for 8-9 hours. Just make sure you cover the meat completely.

Guinness Corned Beef

Ingredients

  • 4 pounds corned beef brisket
  • 1 cup brown sugar
  • 1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness®)

Directions

  1. Preheat oven to 300 degrees F (150 degrees C). Rinse the beef completely and pat dry.
  2. Place the brisket on rack in a roasting pan or Dutch oven. Rub the brown sugar on the corned beef to coat entire beef, including the bottom. Pour the bottle of stout beer around, and gently over the beef to wet the sugar.
  3. Cover, and place in preheated oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.

  • During the last hour, you may put vegetables in the roasting pan as well. Try a wedge of cabbage, new potatoes, onion, carrots, etc. You may need to add a little more beer with your vegetables.
    Serve this dish with some Irish soda bread for the perfect St. Patrick’s Day meal!
